I had been playing around with the idea of a coconut milk chia pudding. Then, I found organic matcha at a health food store in Brooklyn. Intuitively, I knew I had to have it. Soon away, an idea came. This would be the perfect marriage for my yet to be created chia pudding. Matcha has a lot of important health benefits in addition to its great, mild flavor. Specifically, it contains chlorophyll, which detoxes heavy metals and chemical toxins from our systems. Matcha is also rich in antioxidants, specifically, a set of antioxidants called catechins which are the most potent and beneficial and known for their cancer fighting properties. Matcha can also fortify our immune systems, an important quality in today’s world when we are constantly exposed to environmental and other toxins, which can weaken our natural immunity and make us more susceptible to viral, bacterial, and fungal infections. Matcha contains substantial amounts of potassium, vitamin A, vitamin C, iron, protein, and calcium. Matcha, in some studies, has also been shown to inhibit the attacks of HIV on our T-cells.
1/4 cup chia seeds
1 cup unsweetened coconut milk
1 tablespoon raw, local honey
1 tablespoon matcha
Mix all ingredients in a mason jar, tall container, or bowl. Store in fridge overnight. For additional sweetness, you can add additional honey or some organic coconut sugar. Serve and enjoy!
